Composition of Sorbets ?
Sorbet is a mixture of water, sugar and fruit. To be called sorbet, the product must meet strict industrial requirements.
. This means that the product must contain at least the following:
. 18% sugar / 15% fruit acid (lime) / 35% soft fruit (apricot)
A good sorbet depends on the balance of the ingredients:
. Water (approximately 70%): Water provides the volume and allows the mixture to freeze. Too much water causes crystals to form. Conversely, too little water will result in soft, sticky sorbet that melts faster at room temperature.
. Sugar (18 to 30%): Sugar adds sweetness to the product. Too much sugar will make the sorbet heavy and difficult to freeze. Conversely, too little sugar will result in a bland taste. It is also possible to use glucose, which has two times less sweetening power than sucrose.
. Fruit (15 to 70%): Fruit gives the product its flavor. The percentage of fruit varies depending on the type of fruit used.
Composition of Ice-Creams ?
There are 3 different types of ice creams:
. Ice Cream: It contains sugar, flavors and natural fats.
. Ice Cream containing eggs: It consists of sugar, fat and egg yolk.
. Flavored ice: A mixture of water and natural flavors, plus milk or cream in some cases.
To summarize:
. Cream and milk provide the volume
. Fats provide the creaminess
. Flavors provide taste
. Stabilizers make a homogeneous product
. Sugar does not freeze; it enhances the taste and lowers the freezing point.
Why are our products so different ?
MARIOTI makes a variety of upmarket ice creams and sorbets that are exceptionally rich in fruits, using the finest ingredients from the best regions (Montelimar nougat, Bourbon vanilla, etc.).
The ice cream is prepared with premium ingredients including fresh Bresse cream, Echiré butter, natural vanilla extract, top quality chocolate, pistachios from Sicily, and gingerbread from Alsace. Another quality that makes our ice cream better than the rest is the overrun, or percentage of air incorporated into the ice cream, which is probably the lowest on the market. You’ll notice the difference just by comparing the weight of our cartons with those of our competitors!
MARIOTI sorbets are FULL FRUIT, with higher fruit content than other leading brands, which means more fruit per liter. Again, you can tell the difference by comparing the weight! MARIOTI sorbets contain no flavor enhancers, just the pure fruit taste. We use only select fruit from famous regions (wild peach from the Lyon hillsides, blackcurrant from Burgundy, Bourbon vanilla, etc.).
MARIOTI recipes are developed by a master craftsman Glacier, without added flavorings or colorings. Currently MARIOTI offers about forty items that are all rich in fruit and bursting with flavor.
Is there really a difference between MARIOTI and other brands ?
MARIOTI is the mark of good taste. Our ice creams and sorbets are made by Master Craftsmen Glaciers and are guaranteed to be top quality.
We start with:
Natural flavors, not extracts,
Select ingredients, fresh fats
. Then the products are allowed to mature to develop premium flavor and texture, with a low overrun (percentage of added air)
. Finally, the products are frozen gradually to enhance the texture and taste.
The quality of our products is our top priority.
What does Full Fruit mean ?
FULL FRUIT means that the percentage of fruit is higher than what is legally required. MARIOTI goes further than the legislation. MARIOTI sorbets are rich in fruit and high in taste:
. Strawberry Sengana: 60%
. Blood Orange: 60%
. Griotte Cherry: 60%
. Coconut: 59%
. Mirabelle: 59%
Are there different types of packaging ?
. MARIOTI ice creams and sorbets are sold in 500-ml cartons. We are currently working on other types of packaging for different serving formats.
. For individual specialties, we offer a choice of 2-packs and 4-packs for the family.
. For specialties to share, we offer a 400-g format (medium) for entertaining.
. For year-end products, yule logs are available in a 750-ml format.
What is the minimum order ?
. For European countries accessible by land, the minimum order is a full truck.
. For countries accessible by sea or air, the minimum order is a container.
